Vegan Quinoa and Rice Bowl

Method:

  1. Heat the brown rice and quinoa mix, following packet directions.
  2. Finely slice lettuce. Dice tomatoes. Slice avocado. Drain corn kernels*.
  3. In a bowl, add rice and quinoa mix and separate with a fork. Stir though corn, capsicum and black beans.
  4. Assemble each bowl. Add lettuce and spinach to one side of serving bowl. Place rice and quinoa mix in the other. Top with tomatoes and slivered almonds. Add sliced avocado and garnish with coriander.
  5. Serve with lime wedges.

*Tip: The corn kernels can be heated in a pan, with a drizzle of olive oil, to bring out their sweetness.
