Char Grilled Eggplant & Feta Salad

Method

  1. Heat a griddle pan, a char grill or BBQ over high heat.
  2. Cook eggplant, in batches, for 4 to 5 minutes each side, or until browned and tender.
  3. Arrange eggplant on serving platter. Sprinkle crumbled feta, mint and seasoning over eggplant. Drizzle olive oil, add salt and pepper to taste.
  4. Serve immediately.
