Char Grilled Eggplant & Feta Salad
- Heat a griddle pan, a char grill or BBQ over high heat.
- Cook eggplant, in batches, for 4 to 5 minutes each side, or until browned and tender.
- Arrange eggplant on serving platter. Sprinkle crumbled feta, mint and seasoning over eggplant. Drizzle olive oil, add salt and pepper to taste.
- Serve immediately.
