Creamed Baby Spinach

Method

  1. Melt butter in frypan over low heat. Add onion and garlic fry for 5 minutes, or until onions are soft.
  2. Add wine, salt and pepper and simmer gently until the mixture reduces by half.
  3. Add cream and cream cheese and bring to the boil, then simmer for 30 seconds. Add nutmeg, salt and pepper.
  4. Add spinach and cook for 1 minute until spinach is wilted. Sprinkle over parmesan and toss lightly.
  5. Serve immediately.
