Creamed Baby Spinach
- Melt butter in frypan over low heat. Add onion and garlic fry for 5 minutes, or until onions are soft.
- Add wine, salt and pepper and simmer gently until the mixture reduces by half.
- Add cream and cream cheese and bring to the boil, then simmer for 30 seconds. Add nutmeg, salt and pepper.
- Add spinach and cook for 1 minute until spinach is wilted. Sprinkle over parmesan and toss lightly.
- Serve immediately.
