Garlic Chorizo Prawns

Method:

  1. Heat oil in a large, non-stick frying pan over medium-high heat. Add the chorizo slices and cook, stirring occasionally for 4-5 minutes or until golden and crisp. Use a slotted spoon to transfer the chorizo to a plate lined with paper towel.
  2. Reduce heat to medium-low. Add the butter that comes with the prawns to the pan and stir for 30 seconds until melted.
  3. Add the prawns and cook, stirring occasionally for 4-5 minutes or until the prawns curl and change colour. Add the chorizo back to the pan with the prawns and stir to combine.
  4. Transfer to a serving platter and serve warm with crusty bread, garlic aioli and lemon wedges.
