Guacamole

Method

  1. Cut the avocados in half and scoop out the flesh. Place the avocado flesh and lime juice in a bowl and mash with a fork, until almost smooth.
  2. Season to taste with salt and pepper.  
  3. Add the onion and coriander leaves and chilli (if using) and stir with fork to combine.
  4. Season with salt and pepper, garnish with coriander leaves. Serve with lime wedges and corn chips.
