- Cut the avocados in half and scoop out the flesh. Place the avocado flesh and lime juice in a bowl and mash with a fork, until almost smooth.
- Season to taste with salt and pepper.
- Add the onion and coriander leaves and chilli (if using) and stir with fork to combine.
- Season with salt and pepper, garnish with coriander leaves. Serve with lime wedges and corn chips.
