Sweet Potato Dip With Prosciutto And Asparagus

Method

  1. Preheat oven to 200°C (180°C fan forced). Cook sweet potato in a steaming basket over a saucepan of boiling water for 10 minutes until tender. Cool. Process sweet potato, beans, water, oil and sour cream until smooth. Season. Transfer to a serving bowl.
  2. Meanwhile, wrap prosciutto around asparagus. Spray with oil. Bake for 5 minutes or until prosciutto is crispy.
  3. Serve asparagus with dip.
