Blueberry & Banana Loaf

Method

  1. Preheat oven to 200°C. Grease a 14cm x 24cm loaf pan with cooking spray and line with baking paper.
  2. Sift flour, bicarbonate of soda and cinnamon into a large bowl. Stir in the sugar. Combine the milk, eggs, blueberries (leave some spare to top loaf) and banana in a bowl then gently stir into the flour mixture until just combined.
  3. Spoon into loaf pan, scatter over spare
  4. Bake for 45 minutes. Stand for 10 minutes in the pan before lifting onto a wire rack.
