Seared Scallops in Raspberry & Prosecco Vinaigrette
- Cook scallops as per instructions on packaging.
- Mash raspberries in a bowl with fork. Add mustard, sugar, olive oil and mix.
- Add prosecco, salt, pepper and mix.
- Drizzle over cooked, seared scallops and garnish with chives.
- Serve immediately.
