How to Make Vegan Gravy

Method

  1. Peel the onion and carrot and chop with the celery. Peel and mince the garlic.
  2. Add them all to a saucepan with the oil and sauté. Add the water, soy sauce, paprika, tomato passata and pepper.
  3. Chop the mushrooms and add to saucepan.
  4. Cover and simmer for 40 minutes.
  5. Taste for seasoning.
  6. Strain the mix through a sieve and serve.
