How to Make Dark Chocolate & Blueberry Mousse

Method

  1. Scatter fresh blueberries evenly, into 6 small sized serving glasses and set aside.
  2. Beat cream and vanilla extract to soft peaks and set aside 
  3. Melt chocolate in a large heatproof bowl, over a saucepan of simmering water (making sure the bowl doesn’t touch the water). Once melted remove and allow to cool for 2 minutes (room temperature)
  4. Crack the egg, using the two shells to separate the yolk and egg apart.  Place the yolk in a small bowl. 
  5. When the chocolate is ready and cooled, mix through the egg yolk. Then fold the chocolate through the cream mixture to make your mousse.. 
  6. Spoon the mousse amongst serving glasses, on top of the fresh blueberries. 
  7. Garnish with grated chocolate and serve.
