How to Make a Fruit Mince Tart

Method

  1. To make the pastry: place flour, sugar and butter in a food processor. Blend ingredients until they resemble fine bread crumbs.
  2. Add egg yolk, chilled water, orange and lemon rind. Blend until binded. Remove from blender. Wrap in clingwrap and refrigerate for 30 minutes.
  3. Preheat oven 200°C (or 180°C fan-forced). Remove pastry from fridge and let set for 5 minutes. Grease a cake tin 20cm x 4.5cm in size.
  4. Roll pastry out on a floured surface to 1cm thick. Place pastry into tin. Ensure pastry comes halfway up the sides of the tin. Gently press into sides. Trim excess pastry off and set aside.
  5. Add a sheet of baking paper to cover bottom and add rice (or baking beans) to cover the paper. Bake blind in oven for 12-15 minutes.
  6. Remove paper and rice. Add fruit mince and gently spread around evenly. Place in oven and bake for 15 minutes or until pastry is golden and firm. 
  7. With reserved cut-off pastry pieces, use these to make star shapes for garnish. Bake for 15-20 minutes and let cool.
  8. Let pie cool in tin for 10 minutes, then remove and let cool further until fruit mince is cool to the touch. Top with pastry stars and berries.

 

Tip: You can also garnish with icing sugar, dusted over the top of tart before serving.
