Classic Bacon Cheeseburger

Method

  1. Thinly slice onions into rings. Slice tomatoes.
  2. Cut bacon into 3 pieces per rasher. Fry in a large frypan, in batches if needs be. Drain and set aside.
  3. Grill or fry the burger patties on one side until well browned (3-4 minutes). Turn and cook until cooked to your liking (3-4 minutes for medium).
  4. If cooking onions, add them into the pan now. Or you can use them raw on your burger, if you prefer.
  5. Assemble burgers by placing 1 teaspoon of relish* on the bottom and top of each bun, then layer each burger with lettuce, onion, burger patty, cheese, tomato and bacon, in your preferred order with the rest of the divided ingredients.
  6. Top with bun lid and serve immediately.

Tip: Make your own Tomato Relish*

Ingredients:

  • 250g ripe truss tomatoes
  • 1/2 red onion
  • 1/4 tsp Pure Vita vegetable oil 
  • 1/4 tsp Stonemill ground paprika
  • 1/4 cup Remano balsamic vinegar
  • 1/4 cup Merryfield brown sugar 
  • Optional - 1/2 small red chilli, deseeded and chopped 
  • Salt and pepper to taste

Method:

1.    Core and dice tomatoes into small pieces. Peel and dice onions.
2.    Heat vegetable oil in a pan over medium heat. Add onions and cook until soft. Add paprika and cook for 1 minute.
3.    Add tomatoes and cook until soft. Add vinegar and sugar. Add chilli, if using. Simmer, covered, on low heat for 15 minutes. 
4.    Remove lid and check seasoning. Continue to simmer for a further 10 minutes. . 
5.    Cool tomato mixture in pan. Then store in clean airtight jars.
Note: Tomato relish will keep in fridge for 3-4 weeks, in an airtight container.
