Sweet Potato Toast


  1. Wash and dry the sweet potato.
  2. Slice the pointy ends of the sweet potato and then carefully cut into 6mm thick slices.
  3. Toast in a 4-slice toaster if available – otherwise in batches – for 4-5 minutes at a time, depending upon your toaster. The sweet potato should be cooked and not soft or mushy.
  4. Spread each slice with peanut butter. Top 2 of the slices with chopped banana and sprinkle with cinnamon. Top the other 2 slices with the blueberries.

TIP: You can store slices of sweet potato in an airtight container, in the fridge for up to 7 days, ready for use. Also try experimenting with various toppings and flavours, such as smashed avocado and lemon juice or a savoury taste like hommus.
