How to Make Easter Choc Coconut Nests

Method

  1. Line 8 holes of a muffin pan with cling wrap.
  2. Into a heat resistant bowl, break up the chocolate. Put the bowl over a pan of simmering water, making sure the bottom of the bowl doesn’t touch the water.
  3. Stir gently until the chocolate is melted. Add the shredded coconut.
  4. Divide the mixture between the 8 muffin holes and use the back of a teaspoon to create an indent in the middle, slightly pushing the sides up to create a nest shape.
  5. Refrigerate for 1 hour or until chocolate is set. Gently unmould the nests and place on a serving platter. Top each one with a few speckled eggs and serve.

Tip: Try using white or dark chocolate to make the nests, or a combination.

Optional: You could also serve with a few small blueberries or raspberries.
