- Chop onion and bacon. Crush the garlic.
- Cook the pasta in a large saucepan of salted boiling water until tender. Drain and return to saucepan.
- While the pasta is cooking, heat a medium frying pan over medium heat. Add a drizzle of oil and the bacon and cook for 5-6 minutes or until crisp and golden. Remove from pan. Add onion and cook for 5 minutes or until soft and golden. Add garlic and cook for 1 minute. Add tomatoes, chilli flakes, sugar and butter and cook for 2-3 minutes.
- Reserve a little bacon for garnish. Fold through bacon and cooked pasta and heat through. Sprinkle with reserved bacon. Serve with salad mix tossed with olive oil and balsamic vinegar.
TIP: Scatter with home-grown basil leaves.
