How to Make Chicken Citrus Ginger Soup Method Cut orange into 3 wedges. Peel ginger. Cut lemon into quarters. Add to a large saucepan along with water, chicken carcass, onion, garlic, rosemary, celery tops, ginger and salt. If using carrot, add to saucepan whole. If using the whole chilli, add to saucepan now. Simmer for 3 hours, skim the surface to remove any scum whilst cooking. Strain stock and discard the solids. If using the carrot in your soup, slice into rounds and put back into the saucepan. If using shredded silver beet, put in the saucepan now. Add in shredded chicken and season to taste. Warm the soup through to heat up the chicken and silverbeet. Serve with crusty bread.
