How to make a Fish Burger with Sweet Potato Fries

Method:

  1. Preheat the oven to 200°C (180°C fan-forced). Place the fries on a large baking sheet in a single layer and bake for 25 minutes. If making your own sweet potato fries, bake for 35 minutes (see recipe link).
  2. Meanwhile, pat the fish dry with kitchen paper. Set up your crumbing station by placing the flour into a wide, shallow bowl and season with salt and pepper, mix through. Place the egg in another bowl with the milk and whisk to combine. Place the panko bread crumbs in another bowl.
  3. Place a fish piece into the flour, shaking well to remove the excess. Dip into the egg, shake again and place in the bread crumbs, pressing down to get an even coating. Repeat with all the fish.
  4. Place a large frying pan over a medium high heat. Add a small amount of olive oil and cook the crumbed fish for 3-4 minutes each side, or until cooked through.
  5. Drain on kitchen paper and season with salt and pepper, as desired.
  6. While fish is cooking, spread the tartare sauce on the bun bases.
  7. To assemble the burger, top the bun base with the fish and coleslaw mix. Add more tartare if desired. Add the bun lids and serve with the sweet potato fries.

Optional: You can crumb the fish ahead of time and pan fry just before serving. Or, if you prefer, you can oven bake the crumbed fish, but it will not be as crispy and golden. Simply spray well with olive oil and bake at 180°C for 12-15 minutes.
