Zesty Chicken Avocado Bowl


  1. Preheat oven 180ºC (or 160ºC for fan forced oven). Whisk together all of the marinade/dressing ingredients in a bowl. Pour half of the marinade into a shallow dish and set aside for dressing.
  2. Place chicken in a bowl with remaining marinade and coat chicken. Refrigerate for 30 minutes. Remove chicken from marinate, place onto a lined baking tray and bake for 20 minutes or until cooked. Set aside to rest for 5 minutes.
  3. Meanwhile in a separate bowl, combine tomatoes, red onion, cucumbers, parsley and olives and toss.
  4. To assemble the chicken bowl, distribute cos lettuce between bowls and add tomato mixture over cos lettuce, on one side. Add sliced avocado on opposite side of bowl. Slice chicken and place on remaining side of bowl. Drizzle with reserved dressing and serve with lemon wedges.
