How to Make Fully Loaded Iceberg Wedges

  1. Wash iceberg lettuce, and then slice the lettuce head into 4-6 wedges. Set aside.
  2. Prepare the filling. Combine the olive oil, diced onion, cucumber, carrot, black beans and coriander leaves in a large bowl. Combine the cumin, 1 teaspoon chilli flakes, crushed garlic, salt and pepper in a separate small bowl and then sprinkle this seasoning over the filling ingredients and toss gently to combine.
  3. Assemble the wedges on a platter and top with the filling. Drizzle with the dressing and garnish with chilli flakes and coriander.
  4. Season with salt and pepper and serve with lime wedges and corn chips.

Optional: Try adding some corn kernels and/or finely diced red capsicum to the filling.
