How to Make Hot Cross Soldiers with Dippy Eggs
Method
- Finely chop the parsley and spring onion.
- In a wide shallow bowl, mix one egg with the Parmesan cheese, spring onion, parsley (reserve a little for garnish) and a pinch of salt.
- Cut the hot cross buns into soldiers, dip into the egg mixture and fry on a high heat in butter for a few minutes on each side.
- Bring a saucepan of water to a rolling boil. Add 4 eggs to the water and cook for 4-5 minutes or as preferred, for the perfect dippy egg.
- Use seasoned hot cross bun ‘fingers’ to dip into your eggs.
