How to make Potato Waffles with Smoked Salmon


  1. Preheat a 19cm round electric waffle iron. Snuggly pack the defrosted potato jewels*, side by side, to completely cover the waffle iron plate, squishing them together so it’s completely covered. Press the lid down and cook for 5-7 minutes or until golden brown.
  2. Gently remove and place onto a board or platter. Top with the smoked salmon, cucumber and red onion.
  3. Spoon the sour cream on top and sprinkle with dill fronds and black pepper. Cut into 2 or 4 and serve with lemon wedges.

Tip: If making multiple waffles, place them in a low oven to keep warm. For a dairy-free version, simply omit the sour cream.

*Optional: You can substitute the potato jewels for another potato product and experiment with wedges and different chips.
