How to make a Sushi Lunchbox

Method

  1. In a medium-sized saucepan, add rice and bring the rice and cold water to a simmering boil for 12-14 minutes. Place a lid on top and allow to cool down.
  2. Preheat a small frypan, on low to medium heat and lightly oil. In a bowl, whisk egg then add to pan. Moving it around the pan like a crepe, so spread out thinly and evenly around the pan. Allow to cool then cut out desired shapes.
  3. Wash radish and cut a thin slice from the middle. Peel some of the outside (red parts) to cut into thin strips to make the bunny ears.
  4. Shape your cooled rice into the balls and shapes required and arrange in the lunchbox. Use cracked pepper to form faces on the rice. Add the egg shapes to decorate. Add the radish shapes to decorate. Add smoked salmon to decorate or cover the rice balls. Fill up the gaps in the lunchbox with kale.
  5. Add your favorite crackers into the spaces.

Tips: You can add anything to the sushi-style lunchbox. Try adding tuna and mayonnaise inside the rice balls, too.
