Blueberry & Banana Loaf
Method
- Preheat oven to 200°C. Grease a 14cm x 24cm loaf pan with cooking spray and line with baking paper.
- Sift flour, bicarbonate of soda and cinnamon into a large bowl. Stir in the sugar. Combine the milk, eggs, blueberries (leave some spare to top loaf) and banana in a bowl then gently stir into the flour mixture until just combined.
- Spoon into loaf pan, scatter over spare
- Bake for 45 minutes. Stand for 10 minutes in the pan before lifting onto a wire rack.
