How to make Angus Beef Brekky Tacos
Prep Time: 20 minutes | Cook Time: 15 minutes | Serves: 4
Ingredients
Green chilli dressing:
- 2 green chillies, seeds removed, chopped
- 1 cup coriander leaves and stems, chopped
- ½ small brown onion, chopped
- 4 tbsp The Olive Tree extra virgin olive oil
- 2 tbsp lime juice
- 1 tsp salt
- 500g Specially Selected grass-fed angus beef sausages
- 6 Lodge Farms free range eggs, beaten
- 1 tbsp The Olive Tree extra virgin olive oil
- 8 Diego’s street tacos
- 1 avocado, sliced
- 125g Bellino tomatoes, quartered
- Chopped coriander, to serve
- Green chilli slices, to serve
- Lime wedges, to serve
Method
- For the green chilli dressing, whizz the ingredients together in a small food processor until smooth.
- Place a heavy-based frying pan over a medium-high heat. Make a slit along the length of each sausage and remove then discard the skins.
- Place the meat in the hot pan, breaking it up with a wooden spoon. Cook for 10 minutes or until caramelised. Set aside.
- Place a large frying pan over a medium-high heat and scramble the eggs in the olive oil until slightly undercooked, as they will carry on cooking. Season and set aside.
- Chargrill or pan-fry the tacos and place onto a board. Top with the sausage, egg, avocado and tomato. Drizzle with the dressing and serve with coriander, chilli slices and lime wedges.
Optional: Try using chicken or pork sausages.
