Bubble and Squeak Waffles
How to make Bubble and Squeak Waffles
Prep Time: 15 minutes | Cook Time: 15 minutes | Serves: 2
Ingredients
- 200g plain mashed potato (see note below)
- 100g leftover cooked green vegetables, roughly chopped (see note below)
- 1 shallot, finely sliced
- 1 tbsp chopped chives and/or continental parsley, plus extra for serving
- ¼ cup White Mill plain flour
- ½ tsp White Mill baking powder
- 2 Lodge Farm free range eggs, beaten
- The Olive Tree extra virgin olive oil spray
- 2 Lodge Farm free range eggs, fried or poached, to serve
- Bellino or cherry tomatoes, cut into quarters, to serve
Method
- Mix the mashed potato, cooked vegetables, shallots, herbs, flour and baking powder together and season generously. Mix in the beaten egg until evenly combined.
- Spray a mini waffle maker with olive oil and add ¼ the mixture. Cook for a few minutes until cooked through, crispy and browned. Repeat with the remaining mixture. Transfer the waffles to plates.
- Serve topped with fried or poached eggs. Season well and add tomatoes and a sprinkling of chopped chives and/or parsley.
Note: The mashed potato is best made from washed white potatoes. Leftover greens such as cabbage, spinach, brussels sprouts, leeks, peas or kale will work well. You can keep the waffles warm in the oven on a low temperature while you finishing making them all.
