Ham and Corn Fritters
How to make Ham and Corn Fritters
Prep Time: 15 minutes | Cook Time: 10 minutes | Serves: 4
Ingredients
- ½ red onion
- 2 cloves garlic, peeled
- 2 cups New Season corn kernels
- ½ cup White Mill Plain Flour
- 2 Lodge Farm Free Range Eggs
- ½ cup Berg cooked shredded ham, finely chopped
- ¼ cup chives, finely chopped
- Stonemill black pepper, to taste
- The Olive Tree Olive Oil, for cooking
- LYTTOS Greek Style Natural Yogurt
Method
- In a food processor, finely chop the onion and garlic and half the corn, being careful not to purée the ingredients.
- Sprinkle in the flour, mix briefly and then add the eggs. Pulse for 10–20 seconds or until the eggs are just blended.
- Transfer the mixture to a large bowl. Fold in the remaining corn, ham and chives. Season with pepper.
- Heat a large, non-stick frying pan over medium heat and drizzle lightly with olive oil.
- Drop ¼ cup of batter per fritter into the pan, flattening slightly.
- Cook for 2–3 minutes on each side, or until golden and cooked through.
- Serve warm with a dollop of yogurt.
