Ham and Corn Fritters

How to make Ham and Corn Fritters

Prep Time: 15 minutes        |        Cook Time: 10 minutes        |        Serves: 4

Ingredients

  • ½ red onion
  • 2 cloves garlic, peeled
  • 2 cups New Season corn kernels
  • ½ cup White Mill Plain Flour
  • 2 Lodge Farm Free Range Eggs
  • ½ cup Berg cooked shredded ham, finely chopped
  • ¼ cup chives, finely chopped
  • Stonemill black pepper, to taste
  • The Olive Tree Olive Oil, for cooking
  • LYTTOS Greek Style Natural Yogurt

Method

  1. In a food processor, finely chop the onion and garlic and half the corn, being careful not to purée the ingredients.
  2. Sprinkle in the flour, mix briefly and then add the eggs. Pulse for 10–20 seconds or until the eggs are just blended.
  3. Transfer the mixture to a large bowl. Fold in the remaining corn, ham and chives. Season with pepper.
  4. Heat a large, non-stick frying pan over medium heat and drizzle lightly with olive oil.
  5. Drop ¼ cup of batter per fritter into the pan, flattening slightly.
  6. Cook for 2–3 minutes on each side, or until golden and cooked through.
  7. Serve warm with a dollop of yogurt.
