Maple Bacon Waffle Quiche Recipe

How to Make Maple Bacon Waffle Quiche


  1. Preheat oven 180°C (or 160°C fan-forced).
  2. Finely chop the bacon.  Heat a frypan and add bacon, cook on medium - high heat until bacon is crispy. Drizzle in a tablespoon of maple syrup, ensuring all the bacon is coated and cook for 30 seconds. Remove from pan and cool. 
  3. Beat eggs and season with a little bit of salt and pepper. Remove a few leaves of thyme from the sprigs and mix into eggs. Add half of the maple bacon to the egg mixture and combine. Mix well and set aside. 
  4. Warm the waffles slightly in oven or microwave, to soften. Lightly grease an 8-hole muffin tray.
  5. Gently push the waffles into the muffin holes. Fill with mixture and add to oven. Bake for approximately 8 minutes.
  6. While wafflles are baking, coat bacon in maple syrup and fry in a frypan, on medium heat, until cooked through and slightly crispy. Set aside.
  7. Remove waffle quiches from muffin tray and top with remaining crispy bacon pieces. Drizzle with maple syrup and garnish with thyme sprigs. Serve immediately.
