How to make Smoked Salmon and Herb Omelette
Method
- Heat a non-stick frying pan over medium heat with 1 teaspoon of olive oil. Pan fry the tomato, cut-side down, for 2-3 minutes. Season with salt and pepper, then set aside and keep warm.
- In a medium-sized bowl, whisk the eggs with the finely chopped herbs.
- Heat a non-stick frying pan over medium heat with 1 tablespoon of olive oil. Pour the egg mixture into the hot pan, swirling to create an even layer. Cook until the edges start to set, about 3-5 minutes.
- Sprinkle grated cheese and scatter the chopped greens evenly over the omelette. Season with salt and pepper and add a few slices of smoked salmon on one half of the omelette.
- Using a spatula, carefully fold the other half of the omelette over the filling. Continue to cook for another 2-3 minutes, or until the cheese is melted and the greens are wilted.
- Slide the omelette onto a plate and serve immediately, with sliced avocado on the side and the pan-fried tomato.
- Serve with fresh herbs and grated cheese, sprinkled over the top.
Tip: You can use parsley, dill, oregano or chives for this omelette.
Optional: You can use grana padano cheese alongside or instead of the parmesan cheese.
