How to make Leftover Yorkshire Pudding Sandwiches

Method

  1. Preheat the oven to 220°C (180°C fan-forced).
  2. Put the flour in a large bowl and season with salt and pepper, mixing well.
  3. Make a well in the middle of the flour.
  4. In a jug, crack the eggs and add the milk and whisk well.
  5. Pour this into the well in the flour and, with a wooden spoon, gradually mix until you have a smooth batter.
  6. Put a teaspoon of oil into each hole of a 12-hole muffin tin. Put into the oven to heat the oil.
  7. Once heated, divide the mixture between the holes and bake in the oven for 20-25 minutes until golden, risen and crisp.
  8. Allow to cool and prepare your leftovers as various filling combinations.
  9. Assemble the Yorkshire pudding sandwiches with your favourite fillings and enjoy!
