How to make Roast Lamb with Rosemary, Honey and Garlic Glaze

Method

  1. Preheat the oven to 200°C (180°C fan-forced). Put the leg of lamb into a roasting dish just big enough to hold it.
  2. Cut the garlic bulbs in half and stuff around the lamb, along with the rosemary. Pour over the water.
  3. Cook uncovered for 30 minutes, then turn the heat down to 160°C (140°C fan-forced) and cover loosely with foil.
  4. Cook for a further 3 hours.
  5. Meanwhile, make the glaze. Mix all the ingredients together for the glaze.
  6. Turn the heat back to 200°C (180°C fan-forced) and take off the foil. Brush with the glaze and return to the oven.
  7. Cook for another 20 minutes, basting every 5 minutes.
  8. Roast lamb is great served with steamed vegetables and new potatoes.
