How to Make Thai Watermelon Salad


  1. Combine the lime and orange juices, vinegar and fish sauce in a bowl. Using a melon baller, cut the watermelon into large balls.
  2. Using a vegetable peeler, ‘peel’ the firm part of the cucumbers into ribbons (Don’t try to ‘peel’ the seed centre). Place the ribbons in a large bowl.
  3. Gently combine the cucumber ribbons and melon balls and drizzle with the dressing.
  4. Place in a serving bowl and scatter with mint leaves and sesame seeds.

Tip: you can substitute apple cider vinegar with rice vinegar
