How to Make Smashed Cucumber Salad


  1. Wash and cut cucumber into 6cm lengths and then cut each length into 4 long wedges. Place the cucumber pieces flat-side down on a chopping board. Press down on the pieces using the flat side of a large knife. Do this until the skin begins to crack and the flesh softenens. Repeat with all the pieces and then chop or tear into bite-sized pieces.
  2. Sprinkle cucumber with the salt and ⅓ teaspoon of sugar. Place in a strainer over a bowl and place in fridge for 30 minutes.
  3. Meanwhile, make the dressing. Combine the vinegar, soy sauce, sugar and oil in a small bowl. Stir until the sugar dissolves.
  4. Place the drained cucumber on a serving platter. Sprinkle with mint leaves, chilli and black pepper.
