Charred Nectarines with Whipped Ricotta

How to make Charred Nectarines with Whipped Ricotta

Prep Time: 10 minutes        |        Cook Time: 5 minutes        |        Serves: 4

Ingredients

  • 4 nectarines, halved 
  • 2 tbsp White Mill brown sugar
  • 250g Emporium Selection ricotta cheese
  • 2 tbsp Farmdale milk or cream
  • 1 lemon, zested
  • ½ cup picked mint leaves
  • 1 punnet raspberries
  • ½ cup Oh So Natural almonds, toasted

Method

  1. Preheat a bbq or chargrill to medium-high heat. Sprinkle brown sugar onto nectarines. Chargrill for 2-3 minutes each side until warmed through and marked.
  2. Combine ricotta cheese with milk or cream, lemon rind then blend in a food processor for 2 minutes until smooth and fluffy.
  3. Serve grilled nectarines on a platter, topped with whipped ricotta, raspberries and toasted almonds, together with extra whipped ricotta on the side.
