Blueberry French Toast Bake Recipe

How to make Blueberry French Toast Bake


  1. Preheat oven to 180°C (160°C fan-forced). Spray a large (approx. 8 cup/2 litre capacity), ovenproof dish with oil.
  2. Cut the bread into 3cm cubes and place in a large bowl.
  3. In another bowl, whisk together the eggs, sugar, cinnamon and vanilla until smooth.
  4. Place ½ the blueberries in a shallow bowl and crush using a potato masher or fork. Stir into egg mixture.
  5. Add the bread cubes to blueberries and eggs and toss gently until fully soaked with the mixture.
  6. Spoon into the prepared baking dish and scatter over the remaining blueberries. Cook for 50 minutes to 1 hour or until the egg mixture has cooked and the bread cubes are golden.
  7. Serve drizzled with maple syrup or honey.

Optional: Serve on a platter and lightly dust with Merryfield icing mixture and serve immediately.

Tip: Accompany with natural yogurt or cream.
