How to make Caramelised Brown Sugar Cinnamon Grilled Pineapple

Method

  1. Cut the top off the pineapple and turn upside down, placing it on a cutting board and rest for 10-15 minutes. This will allow gravity to start moving the juices down, for evenly juiced slices (as they are generally stored topside up).
  2. Once rested, cut the other end off the pineapple. Remove the skin by carefully slicing it away, following the shape of the pineapple and removing as much of the pineapple ‘eyes’ as possible. You can use a small knife to cut off the remaining eyes, before you start the slices.
  3. Cut pineapple into wedges. Combine honey, lemon juice and cinnamon in a ziplock bag. Add cut pineapple and toss to coat in marinade.  
  4. Marinate pineapple for 30 minutes or overnight.
  5. Heat your frypan or BBQ grill. Add butter and melt. Cook on medium to high heat until pineapple browns.
  6. Remove the pineapple add skewers and enjoy.

*Tip: Choose a pineapple that is golden in colour. Gently squeeze to feel texture and if it is ripe enough, it will give a little. Choose a pineapple that has a slightly sweet and pleasant aroma.
