How to Make Kiwi Fruit and Avocado Pudding


  1. Peel 3 kiwi fruit and chop into pieces. (Reserve the remaining 2 kiwi fruit for garnish).
  2. Remove the skin and seeds from avocados and place the flesh into a food processor or blender. Add the chopped kiwi fruit, coconut cream, lime juice, zest and sugar. Process/blend for 1-2 minutes or until very smooth.
  3. Spoon into 4 glasses to serve. Smooth the tops with the back of a spoon. Place in fridge for 2 hours or until firm.
  4. To serve: peel the reserved kiwi fruit. Halve and slice one, and cube the remaining one. Garnish each pudding with slices and cubes.
