How to make a Poached Pear Yogurt Bowl

Method

  1. Place the wine, honey, star anise and vanilla into a small saucepan, placed over a high heat. Once it starts to bubble, add the pears and reduce the heat to medium-low. Place a small plate over the pears to submerge them in the liquid. Simmer for 45 minutes, turning them once or twice during poaching.
  2. Remove the poached pears and set them aside to cool. Turn the heat up to high and reduce the liquid for 5 minutes or until thick and syrupy. Check for sweetness. If you prefer a little more sweetness you can add a bit more honey to taste. Set aside to cool.
  3. When ready to serve, divide the yogurt amongst 4 small plates. Halve the pears and place 2 halves on each plate.
  4. Drizzle over the reduced liquid and top with the macadamia nuts.

Tip: This makes a great prepare-ahead dinner party dessert. Pears can be poached up to 2 days earlier.

Optional: You can serve the pears and syrup warm if preferred. If so, try serving with a scoop of frozen yogurt or ice cream.
