How to make Roasted Strawberry, Balsamic and Black Pepper Cobbler

Method

  1. Preheat the oven to 180°C (160°C fan-forced ). Place the strawberries, caster sugar, cornflour, orange zest, vinegar and pepper into a 26cm ovenproof skillet pan and stir to combine.
  2. Bake for 25 minutes or until the berries have released some liquid. Set aside while you prepare the topping.
  3. For the cobbler batter: place the butter, flour, baking powder and raw sugar into a mixing bowl and rub through with your fingertips until the consistencty of coarse sand. Stir in the milk and vanilla until you have a thick batter.
  4. Place large spoonfuls of the batter on top of the cooked berries. Leave some space between each of the batter mounds. Sprinkle with raw sugar and bake for 30 minutes or until puffy and golden.
  5. Rest for 10 minutes and serve hot or warm. Serve with vanilla ice cream.

Optional: Try a combination of whichever berries you have on hand.

Tip: You can make the berry filling up to 2 days ahead.
