How to Make a Papaya Paradise Mocktail

Method

  1. Make meringue first. Separate the eggs, placing the whites in a mixing bowl. Refrigerate the unused yolks – see tip below.
  2. Beat the egg whites on high speed with a hand mixer until they become frothy – approximately 1 minute. Add the white vinegar and continue beating. Add the sugar, 1 tablespoon at a time.
  3. Continue to beat at high speed until the mixture forms stiff peaks. Place meringue mixture in a piping bag fitted with a medium-sized, round nozzle and set aside.
  4. Make the smoothie. Combine the papaya, bananas, coconut milk, honey, lime, yogurt and ice in a blender and blend until smooth. Pour into 2 tall, chilled glasses.
  5. Pipe the meringue on top of the smoothies in dollops.
  6. Using a chef’s torch, with the flame adjusted to be small enough to allow you to easily manage it, carefully torch to toast the top surface of the meringue. Serve immediately.

Tip: Cover the leftover egg yolks and refrigerate. You can mix the leftover egg yolks with 2 whole eggs, cheese, ham and chopped tomato, to make a rich omelette.
