How to make Spicy Pineapple Smash
Method
- Make the chilli salt first. Grind the chilli flakes and salt together with a mortar and pestle. Set aside.
- Grill pineapple wedges for 1-2 minutes on each side on a lightly oiled, hot barbecue or grill pan (see tip below). Sprinkle a little chilli salt on each wedge. Set aside while you make the drink.
- Make a simple syrup. In a small saucepan on high heat, bring ¼ cup of water to a boil and add ¼ cup of sugar. Reduce heat to medium and simmer for 1 minute. Remove from heat and stir until the sugar has dissolved. Set aside to cool.
- Place diced pineapple chunks, orange juice, lime juice, pineapple juice, mint leaves and 1 green chilli (or jalapeño) into a blender and blitz well on high speed.
- Turn blender off and add in 2 tablespoons of the simple syrup. Give it a couple of quick pulses to combine.
- Strain into 2 glasses filled with crushed ice and a few chilli (or jalapeño) slices.
- Garnish each with a skewered, charred pineapple slice and a whole green chilli (or jalapeño). Serve immediately.
