How to make Carrot Cake Oatmeal Cookies


  1. In a medium-sized bowl, whisk together the oats, flour, baking powder, cinnamon, nutmeg, ground ginger and salt.
  2. In a separate bowl, whisk together the butter, egg and vanilla. Stir in the maple syrup and honey until thoroughly combined.
  3. Combine the wet mixture with the flour mixture, stirring just until incorporated. Fold the carrots through. Cover and chill the dough for at least 30 minutes.
  4. Preheat the oven to 180°C (160°C fan-forced). Line a baking sheet with baking paper.
  5. Drop the cookie dough into 14 rounded scoops onto the baking sheet. Flatten slightly using a spatula. Bake for 12-15 minutes.
  6. Cool on the baking sheet for at least 15 minutes before turning out onto a wire rack.

Note: Once cooled, can be stored in an airtight container.
