How to make Coconut Baked Salmon

Method

  1. Preheat oven to 180°C (160°C fan-forced). Line a baking tray with baking paper.
  2. Place soy sauce and sweet chilli sauce in a bowl and combine. Place the shredded coconut in another bowl.
  3. Coat the salmon in the sauce mixture and then roll in the coconut. Place on prepared tray.
  4. Bake for 9-14 minutes or until salmon is just cooked and the coconut is golden. Sprinkle with the lime zest.
  5. Serve salmon with sweet chilli sauce and lime wedges. Garnish with coriander leaves (optional).
