How to make Healthy Carrot Cake Muffins

Method

  1. Preheat oven to 180°C (160°C fan-forced). Line 12 baking cups with paper liners. Set aside.
  2. Combine flour, oats, baking powder, baking soda, cinnamon, nutmeg, ginger, salt and walnuts  together in a large mixing bowl. Stir together until combined. Set aside.
  3. In a separate bowl, combine the eggs, sour cream, honey, olive oil, vanilla and carrots. Stir until combined.
  4. Add the wet ingredients to the dry ingredients, then stir until just combined.
  5. Into a 12-hole, small muffin tray, spoon the batter evenly. Bake for 15-18 minutes, or unti cooked through. Transfer the muffins to a cooling rack.
  6. While the muffins are cooling, make the icing. In a medium-sized bowl combine the milk and lemon juice with the icing mixture. Stir until it comes together to a drizzling consistency. Add more milk or icing sugar to adjust to the desired consistency.
  7. Once the muffins have cooled, use a small spoon dipped in the icing, to drizzle on the top of each muffin.

Optional: Substitute other nuts such as pecans or macadamias in place of walnuts.
