How to make Melon Ball Salad


  1. Cut rockmelon in half and remove seeds. Using a melon balller, scoop out rockmelon balls and place them into a large mixing bowl.
  2. Add the drained bocconcini, olive oil and vinegar. Season well with salt and pepper and toss to coat.
  3. Slice the prosciutto in to halves, lengthways. Place slices onto a platter, gently gathering each slice to create some height.
  4. Spoon the melon and bocconcini on top, along with its dressing.
  5. Scatter with basil and/or mint leaves and serve.

Tip: If you don’t have a melon baller you can simply peel and cube the rockmelon into small, even-sized pieces.
