How to make Vegan Gingerbread Pancakes


  1. Grate the ginger and then chop as fine as possible. In a mixing bowl, add flour, cinnamon, sugar and baking powder and whisk well.
  2. Add the almond milk and apple cider vinegar and whisk well to combine.
  3. Heat a little oil in a non-stick frying pan and cook tablespoons of the batter, swirling slightly to get a round pancake. Keep the pancakes warm while you cook the remainder.

To serve, stack pancakes, sprinkle with the desiccated coconut and drizzle with some maple syrup.
