How to Make Chicken Burritos with Apple and Corn Salsa
Method
- Preheat the oven to 200°C (180°C fan-forced). Line a baking tray with foil and baking paper. Place chicken on the tray and sprinkle with the burrito seasoning, tossing to coat.
- Cook for 20-25 minutes or until cooked and golden, turning halfway through. Leave to rest for 10 minutes then thinly slice.
- Heat a medium-sized frying pan over high heat. Rinse and drain the corn kernels and add to the pan. Cook for 3-4 minutes stirring, or until slightly charred. Place in a mixing bowl to cool. Once corn has cooled, add the shredded cabbage, kale and apple to the bowl. Drizzle with olive oil and vinegar and season with salt and pepper.
- Chargrill the burritos and spread with the aioli. Top with the salsa, sliced chicken and avocado and wrap.
- Serve with the burrito sauce on the side and salad. Add optional lime wedges.
