Pork and Noodle San Choy Bow

Method

  1. Heat oil in a large, deep frying pan over medium-high heat. Add pork mince and cook for 5 minutes, breaking up any lumps with a wooden spoon as it cooks. Peel and finely grate ginger, and crush garlic. Finely slice spring onions, keeping white and pale green parts separate from darker green parts.
  2. Add white spring onions, ginger and garlic to pork and stir fry for 1 minute. Stir in soy sauce and brown sugar. Remove from heat.
  3. Place noodles into a large, heatproof bowl and cover with boiling water. Stand for 1 minute, then drain. Grate carrot and cut lime into wedges.
  4. Add noodles to pan over medium heat and toss to combine with pork. Taste and add a little more soy sauce if required.
  5. Serve pork mixture in lettuce leaves, topped with carrot and green spring onions. Garnish with fresh coriander leaves and serve with lime wedges.
