Lemon and Herb Lamb Loin Chops
How to make Lemon and Herb Lamb Loin Chops
Prep Time: 5 minutes + 20 minutes marinating time | Cook Time: 20 minutes | Serves: 4
Ingredients
- 3 lemons
- 2 cloves garlic, finely chopped
- 2 tbsp parsley, chopped
- 2 sprigs rosemary – 1 sprig finely chopped and 1 sprig for serving
- 2 tbsp The Olive Tree olive oil
- 550g Killarnee Lamb chops
- Stonemill sea salt and cracked pepper
- ¼ cup Bramwells honey
Method
- Cut lemons in half. Juice 3 halves and leave the remaining aside for garnish. Combine garlic and parsley with chopped rosemary, olive oil and lemon juice in a large bowl, then add lamb chops. Season with salt and pepper, turn to coat and allow to marinate for 20 minutes.
- Heat a large frypan over medium-high heat. Cook lamb chops for 5-6 minutes each side. Turn heat down to medium and cook for a further 5 minutes or until done to your liking. Remove and set aside. Drizzle with honey while still hot.
- Place remaining 3 lemon halves into a hot pan and sear for 1-2 minutes, until golden.
- Serve lamb chops on a platter with seared lemon halves, extra rosemary sprig and drizzle with pan juices.
