Chilli and Lime Corn Ribs
How to make Chilli and Lime Corn Ribs
Prep Time: 15 minutes | Cook Time: 15 Minutes | Serves: 4 as a side
Ingredients
- 500g The Good Stuff sweet corn
- ⅓ cup lime juice, plus 1 lime cut into wedges, to serve
- ¼ cup The Olive Tree olive oil
- 2 red chillies, chopped
- 1 tbsp White Mill caster sugar
- ½ red onion, finely chopped
- 2 tbsp coriander leaves, picked and chopped
Method
- Cut the pointy end off each corn cob. Stand the corn upright and, using a sharp knife, cut in half down through the core, then cut each half into quarters. Place into a large saucepan and fill with water. Cook corn ribs for 10-15 minutes until tender.
- Meanwhile, combine the lime juice with olive oil, chilli, sugar, red onion and coriander. Season with salt and pepper.
- Arrange hot corn cobs on a platter and drizzle with the chilli lime sauce. Serve with extra lime wedges.
Tip: Heat up the BBQ and chargill the corn instead of boiling. This gives a beautiful, charred corn flavour.
