Mango, Avocado and Prawn Salad
How to make Mango, Avocado and Prawn Salad
Prep Time: 15 minutes | Serves: 4
Ingredients
- 350g Ocean Royale cooked peeled prawn cutlets, thawed
- 1 ripe mango, sliced
- 1 ripe avocado, sliced
- ½ small red onion, finely sliced
- 300g Petite Bright mixed tomatoes, halved or quartered
- Small handful of mint leaves, roughly chopped
- Small handful of dill fronds, roughly chopped
- 2 tbsp The Olive Tree extra virgin olive oil
- Juice of ½ lemon
- Mint leaves, dill fronds and lemon wedges, to serve
Method
- Place the prawns into a large mixing bowl with the mango, avocado, onion, tomatoes, mint and dill.
- Season well and add the olive oil. Toss gently and add lemon juice, to taste.
- Transfer to a serving platter and top with mint leaves and dill fronds. Serve with lemon wedges.
Optional
The prawns can be served with the tails on, or you can remove them.
